Peach Bellini
Bellini, Pesca Bellini, Peach Sparkling Cocktail
Food, Place & the Past
The Peach Bellini was created in the 1940s at Harry's Bar in Venice, Italy.
The cocktail is named after the 15th-century Venetian painter Giovanni Bellini, as the soft, glowing hues of the drink were thought to resemble the colours in his artwork. It quickly became a symbol of Venetian sophistication and a staple of the city's vibrant cafe culture.
Traditionally, the drink relies on the high quality of white peaches, which provide a delicate sweetness and velvety texture. The addition of prosecco, a dry sparkling wine from the Veneto region, cuts through the richness of the fruit, creating a light and airy beverage. While the original version focused purely on peach, modern variations often incorporate other berries to adjust the colour and flavour profile.
The Bellini represents the Italian approach to the aperitivo, designed to stimulate the appetite before a meal. Its popularity spread globally, becoming particularly associated with luxury breakfasts and high-end social gatherings. Today, it remains one of the most recognisable Italian cocktails, celebrated for its simplicity and seasonal appeal. ■
