Yet that is exactly where the next wave of dairy and egg proteins is being brewed. Precision fermentation - the practice of programming yeast or bacteria to produce specific food molecules - is turning what was once a laboratory curiosity into a commercial reality, with products already appearing on retail shelves across Europe and North America.

One of the most striking arguments for the technology comes from its climate credentials. Earth911 notes that producing a kilogram of conventional milk protein can emit up to 72 kg of CO₂-equivalent, largely because dairy cows release methane that is many times more potent than carbon dioxide. By contrast, a bioreactor can generate the same protein using a fraction of that footprint, simply by feeding microbes sugar derived from waste streams. The result is a protein that carries the functional properties of milk without the greenhouse-gas burden of the animal.

European innovators are leading the charge. Dutch startup Vivici, a joint venture between dairy giant Fonterra and flavour powerhouse DSM-Firmenich, secured €12.5 million from the European Innovation Council to scale its precision-fermented dairy proteins. The funding will help the company move from pilot-scale fermenters to industrial-size vessels, leveraging a Danish strain-engineering platform that boosts both yield and purity. Germany’s Formo is taking a similar route with casein, the milk protein that gives cheese its stretch and melt. Formo’s approach, highlighted by Greenqueen, emphasises “sustained amino-acid release and clean sourcing”, positioning the ingredient as a premium alternative for manufacturers seeking functional precision without the logistical challenges of traditional dairy supply chains.

The ripple effect is already reshaping ingredient strategies beyond pure dairy replacements. EDairynews observes a shift toward hybrid formulations that blend plant-derived proteins with precision-fermented dairy components. This multi-source approach satisfies flexitarian consumers who crave familiar taste and texture while keeping prices competitive. By integrating microbial casein with pea or oat proteins, manufacturers can fine-tune melt, foaming and emulsification properties, delivering products that feel and perform like their animal-based counterparts.

Egg proteins, too, are undergoing a quiet revolution. The EVERY Company, in partnership with pharmaceutical contract manufacturer Huvepharma, announced a four-fold expansion of its fermentation capacity in Bulgaria, enabling mass production of OvoPro™ - the world’s first commercially available egg protein made without hens. According to Pharmaceutical Era, the expansion follows a surge in demand from retailers such as Target and Walmart, underscoring how quickly the market is embracing these novel ingredients.

For the everyday cook, the most visible sign of this shift may be a label you never notice. IngrediCheck explains that precision-fermented ingredients often appear under familiar names-whey, casein, heme-without any special disclaimer. The heme that gives the Impossible Burger its meat-like colour, for example, is produced by yeast engineered with a soy gene, a fact most consumers remain unaware of. As the technology matures, transparency and consumer education will become as important as the science itself, ensuring that the promise of animal-free protein translates into trust on the plate.
