Mediterranean Cauliflower - Simple Ingredients, Bold Flavours

Steaming a whole head of cauliflower until just crisp-tender is one of those kitchen moves that transforms an understated vegetable into something genuinely exciting - and this Mediterranean Cauliflower dish makes the most of every minute on the heat. Cauliflower has been cultivated across the Mediterranean since ancient Roman times, prized for its ability to absorb the bold flavours it is cooked alongside. Here, it does exactly that, drinking in a vibrant combination of tomatoes, olives, and green onions before being crowned with crumbled feta.

The process is refreshingly quick. Florets are steamed for just four to six minutes over boiling water - enough to take the raw edge off without losing that satisfying bite. The pot is then put straight to work again: drained tomatoes with basil, oregano, and garlic, sliced green olives with pimientos, spring onions, salt, and pepper all go in with the cauliflower and are brought up to a brief simmer. Three to five minutes is all it takes for everything to meld together into something that smells wonderfully of a sun-warmed Mediterranean kitchen.

  • Use diced tomatoes seasoned with basil, oregano, and garlic for the best flavour without any extra work.
  • Draining the tomatoes well before adding them keeps the dish from becoming too watery.
  • Green olives with pimientos add a pleasant briny sweetness - don't be tempted to swap them out.

The finishing touch is a generous scatter of crumbled feta straight over the top before serving. It softens slightly against the warmth of the vegetables, turning salty and creamy in all the right places. Serve this as a vibrant side alongside grilled lamb or fish, or pile it into a bowl with warm flatbread for a thoroughly satisfying meat-free meal.
