Georgian Cheese Bread Perfection

Imagine tearing into a golden, boat-shaped loaf fresh from the oven, steam carrying the scent of melted cheese and warm bread through your kitchen. Khachapuri is Georgia's beloved national dish, a magnificent cheese bread that doubles as both comfort food and edible centrepiece.

The Art of the Dough Boat

The magic begins with a rich, yeasted dough enriched with butter and milk, creating a tender yet sturdy vessel. You roll it into an oblong oval, fill the centre with a generous mixture of tangy goat cheese and milky mozzarella, then fold the edges to create walls that hold the molten treasure within.

Just before baking, you crack eggs directly onto the cheese, allowing them to nestle into the filling. The result is a spectacular contrast of crisp, buttery crust and gooey, bubbling centre, with runny yolks waiting to be broken and swirled through the cheese.

Best served warm with the crust torn away and dipped into the centre, this is communal eating at its finest. Whether you make one large sharing loaf or individual portions, khachapuri transforms any meal into a celebration.
