Sizzling Meets Smoke: The Discada Tradition

Discada takes its name from the repurposed plough disc that serves as the traditional cooking surface across Northern Mexico. This hearty preparation hails from the arid ranchlands of Coahuila and Chihuahua, where cattle culture meets resourceful outdoor cooking.

The magic lies in the layering. Bacon renders slowly to create a smoky foundation, followed by crumbled chorizo that stains the oil deep orange.
