Wok-Fired Umami: Malaysian Belacan Fried Rice

High heat and a well-seasoned wok transform humble day-old rice into a dish of remarkable depth. The technique demands patience first - soaking dried shrimp until plump and yielding - before the rapid dance of stir-frying begins. This Malaysian staple relies on timing rather than complexity, rewarding the cook with grains that separate cleanly while carrying intense savoury notes.

Belacan, that fermented shrimp paste with its unmistakable pungency, forms the backbone of this recipe. When crumbled and fried until fragrant alongside rehydrated dried shrimp, it creates a double layer of marine umami that permeates every grain. The string beans add a crisp counterpoint, tossed quickly over high heat to retain their bite and bright colour.

The Egg Technique
