Baked Kibbeh

Roots, Region & Table

Kibbeh, whose name derives from the Arabic word “kubba” meaning “ball”, has been a staple of Levantine cuisine for centuries.

Early references date back to the medieval Arab world, where bulgur wheat and minced meat were combined to create portable, protein-rich meals for travelers and soldiers. The baked version, known as “kibbeh bil sanieh”, emerged in the Ottoman period as a way to serve larger groups; the mixture is pressed into a pan, layered with a spiced meat filling, and baked until the crust turns golden.

Regional variations incorporate local herbs such as mint or basil and pine nuts, reflecting the agricultural bounty of the Levant. Today, baked kibbeh remains a beloved dish in Lebanon, Syria, Jordan and Palestine, often prepared for holidays, weddings and communal feasts. ■
