Baked Kibbeh - A Levantine Classic Worth Mastering

Baked Kibbeh · Andrew T.

Few dishes tell the story of Levantine cooking as eloquently as kibbeh. Considered the national dish of Lebanon and Syria, this layered bake of spiced bulgur wheat, ground beef, and toasted pine nuts has been prepared in home kitchens across the Middle East for centuries - each family with their own spice ratios, their own preferred herbs, their own way of scoring the top into the distinctive diamond pattern before it goes into the oven.

This version builds the dish in two distinct parts. The filling comes first - 95% lean beef browned with diced onion, seasoned generously with 7-spice, and finished with a handful of pine nuts folded through. It is savoury, aromatic, and deeply satisfying on its own. But it is the kibbeh shell that sets this dish apart. Fine bulgur wheat is soaked briefly, then blended with quartered onion, fresh basil and mint, kamouneh spice, and 100% lean ground beef until a smooth, cohesive paste forms. The result is something between a dough and a forcemeat - firm enough to press into layers, fragrant enough to perfume the entire kitchen.

Assembly is where patience pays off. Half the kibbeh paste is pressed firmly across the base of a greased baking dish, the filling is spread evenly on top, and the remaining paste is smoothed over with wet hands to seal everything in. Diagonal cuts across the surface create those characteristic diamond shapes, each one a vessel for a pine nut and a light drizzle of olive oil.

  • Wet hands are essential when pressing the top layer - the paste will stick otherwise.
  • Kamouneh spice is a fragrant Lebanese blend typically including cumin, cinnamon, and dried herbs - worth seeking out for authenticity.
  • The pine nuts on top will toast beautifully in the oven, so no need to pre-toast them.

After 40 to 45 minutes at 200°C, the kibbeh emerges golden, aromatic, and perfectly set. Serve it straight from the dish with a simple salad and flatbread alongside.
