Instructions

Main
Step 1 instruction thumbnail 1

Bring a pot of lightly salted water to the boil. Rinse the basmati rice thoroughly in several changes of water. Drain, then add to the boiling water. Cook for 6 minutes. Drain again.

Step 2 instruction thumbnail 2

Meanwhile, heat a heavy-bottomed pot to high. Season the lamb with salt and pepper, then brown in half the olive oil (1 Tbsp) in batches. Stir occasionally. Remove the meat, then add 125 ml water to the pan. Mix with the juices and crusty bits. Transfer to a bowl.

Step 3 instruction thumbnail 3

Reduce the heat to medium. Fry the onions and cumin seeds in the remaining olive oil and the butter, stirring regularly, until the onions just begin to colour, 10-15 minutes.

Step 4 instruction thumbnail 4

Add the garlic and cook for another minute, stirring constantly.

Step 5 instruction thumbnail 5

Reduce the heat to low. Add the browned meat, then layer the carrots, pul biber and parboiled rice on top. Pour in the reserved frying pan water. Use the handle of a spoon to poke 5-6 holes through the rice to the bottom of the pot.

Step 6 instruction thumbnail 6

Wrap a kitchen towel around the lid and place it on the pot. Leave over a low heat until the rice is tender, 10-15 minutes. Remove from the heat and leave to rest for a few minutes.

Step 7 instruction thumbnail 7

Mix together before serving, garnishing with flat-leaf parsley if desired.

Hearty Uzbek Plov: A Central Asian Classic

In Uzbekistan, plov holds ceremonial status, traditionally prepared by men in vast kazans over open flames during weddings and celebrations. This aromatic rice dish layers tender lamb, sweet carrots and whole cumin seeds into a harmonious one-pot feast that has sustained travellers along the Silk Road for centuries. The very name evokes communal gatherings and hospitality.

The technique demands patience and attention. You begin by searing cubed leg of lamb until it develops a deep caramelised crust, then deglaze the pot with water to capture every savoury bit. Onions and cumin seeds fry slowly in butter until golden, creating a fragrant base that permeates every grain during the final steaming.

Building the Layers

Parboiled basmati rice sits atop the meat and julienned carrots, with holes poked through to the bottom allowing steam to circulate evenly. A cloth-wrapped lid traps moisture, gently finishing the dish over low heat until the grains separate perfectly and absorb the rich meat juices.

Serve the rice first, crowned with tender meat, or toss everything together with a sprinkle of fresh flat-leaf parsley. Either way, the result is a comforting, aromatic plate that brings the authentic warmth of Central Asia to your table.
