Uzbek plov, known locally as osh, stands as the national dish of Uzbekistan with roots stretching back centuries along the Silk Road.

It holds such cultural significance that it was inscribed on UNESCO's Intangible Cultural Heritage list in 2016, recognising the tradition as a cornerstone of Uzbek identity. The dish varies distinctly by region - Ferghana Valley plov uses generous amounts of oil and meat for a richer result, while Samarkand style carefully layers ingredients to maintain separation until serving.

Traditionally prepared by male specialists called oshpaz in heavy cast iron kazans over open flames, it serves as the centrepiece of weddings, festivals, and Friday communal prayers. The combination of rice, lamb, carrots, and cumin reflects the agricultural bounty of the region and the convergence of Persian, Turkish, and Mongol culinary influences that travelled the ancient trade routes.
