Step 1 instruction thumbnail 1

Remove grape leaves from the jar, rinse them well, and blanch in boiling water for a few minutes to soften them and remove excess brine. Drain and set aside.

Step 2 instruction thumbnail 2

Sauté ground meat and chopped onions in a saucepan until the meat is cooked through and onions are soft, then remove from heat and let cool.

Step 3 instruction thumbnail 3

In a bowl, combine the uncooked rice, cooked meat and onion mixture, parsley, mint, cinnamon, allspice, salt, and pepper.

Rolling
Step 4 instruction thumbnail 4

Lay a grape leaf flat with the shiny side down and place approximately one tablespoon of filling near the stem end.

Step 5 instruction thumbnail 5

Fold the sides of the leaf over the filling and roll tightly, ensuring the roll is secure.

Cooking
Step 6 instruction thumbnail 6

Place any torn or unused grape leaves at the bottom of a large pot to create a protective layer.

Step 7 instruction thumbnail 7

Arrange the rolled grape leaves seam side down in the pot, packing them closely together to prevent unraveling.

Step 8 instruction thumbnail 8

Mix tomato sauce or crushed tomatoes with water, olive oil, and lemon juice, then pour the mixture over the leaves.

Step 9 instruction thumbnail 9

Place a few extra grape leaves on top of the rolls and press an upside-down heatproof plate over them to keep them from floating.

Step 10 instruction thumbnail 10

Add enough water to cover the leaves completely and cover the pot with a lid.

Step 11 instruction thumbnail 11

Simmer over medium-low heat for 45-60 minutes until the rice is fully cooked.

Serving
Step 12 instruction thumbnail 12

Remove the rolls carefully and arrange on a platter; let them cool and set overnight for best flavor.

Step 13 instruction thumbnail 13

Serve at room temperature or cold, optionally with yogurt or an extra squeeze of lemon juice.

Koupepia: Cypriot Grape Leaf Rolls

A single grape leaf can hold a world of flavour. Andrew, a UK-born enthusiast now living in Cyprus, enjoys turning this humble ingredient into a communal celebration.

Rolling the Leaves

First, rinse and blanch the leaves to soften them and remove the brine. Cook the ground meat with onions until fragrant, then mix with rice, parsley, mint, cinnamon, allspice, salt and pepper. Roll each leaf with a tablespoon of filling, folding the sides tightly like a burrito, and set them seam-side down in a pot lined with torn leaves.

Pour a sauce of tomato, olive oil, lemon juice and a splash of water over the rolls, cover with a plate to keep them from floating, and simmer gently for 45-60 minutes until the rice is tender. Let the Koupepia rest overnight; the flavours deepen, making them perfect for a chilled appetizer or side dish. Serve at room temperature with a dollop of yogurt or a squeeze of fresh lemon for brightness.

Culture, Heritage & Culinary Tradition

Koupepia history

Koupepia are a cornerstone of Cypriot and broader Eastern Mediterranean cuisine, reflecting the region's deep connection to the land and sea. The practice of stuffing leaves is an ancient culinary technique, influenced by Ottoman traditions and the availability of wild grapevines across the landscape. In Cyprus, these rolls are distinct for their specific blend of spices and the use of both pork and lamb.

Historically, the preparation of Koupepia was a communal activity, often involving multiple generations of women gathering to roll hundreds of leaves for festive occasions and family gatherings. This social aspect reinforced community bonds and ensured that the precise technique of tight rolling was passed down through the ages.
