Instructions

Step 1 instruction thumbnail 1

Ensure the cylindrical mould is cleaned and dried thoroughly.

Step 2 instruction thumbnail 2

Remove stems from the fresh herbs and chop them finely.

Step 3 instruction thumbnail 3

Whip together the softened butter, roasted garlic, chopped herbs, pepper, and salt in a bowl until smooth, ensuring the butter is soft but not melted.

Step 4 instruction thumbnail 4

Spoon a half-inch layer of the butter mixture into the bottom of the mould and spread evenly.

Step 5 instruction thumbnail 5

Firmly tap the mould against the countertop to release air bubbles and level the butter.

Step 6 instruction thumbnail 6

Press the bottom of a cotton wick into the centre of the butter, laying the top of the wick over the edge of the mould.

Step 7 instruction thumbnail 7

Tie a chopstick or butter knife to the loose end of the wick and gently roll it down until it rests on top of the mould to keep the wick centred.

Step 8 instruction thumbnail 8

Spoon in another layer of butter about an inch thick, tapping the mould firmly against the counter to remove bubbles.

Step 9 instruction thumbnail 9

Repeat the layering and tapping process until all the butter is used, ensuring the wick remains in the middle.

Step 10 instruction thumbnail 10

Smooth the top of the butter, cover with plastic wrap, and refrigerate for at least 1 hour, ideally overnight.

Step 11 instruction thumbnail 11

Cut a hole the size of the mould into the top of the crusty bread loaf, cutting 3/4 of the way down while leaving the bottom crust intact.

Step 12 instruction thumbnail 12

Remove the cut portion of the bread to create a hole of the desired depth.

Step 13 instruction thumbnail 13

Place the bread on a large serving platter surrounded by toasted baguette pieces and garnish with fresh herbs.

Step 14 instruction thumbnail 14

Use a sharp knife or scissors to carefully slice the mould away from the butter candle.

Step 15 instruction thumbnail 15

Trim the wick to approximately half an inch.

Step 16 instruction thumbnail 16

Light the wick and allow the butter to melt for dipping.

Other considerations for this recipe

Butter Texture
Use very soft butter that can be easily moulded rather than melting it to maintain the best texture.
Herb Selection
Use fresh herbs instead of dried to ensure they hydrate properly and provide maximum flavour.
Wick Safety
Use a cotton wick without a wax coating to avoid adding wax to the edible butter.
Preventing Air Pockets
Press the butter down with a spoon and tap the mould against the counter during layering to remove air bubbles.
Chilling Time
Chill the candle overnight if possible to allow the flavours to meld together.
Flavour Variations
For a sweet version, add cinnamon and honey; for a savoury twist, try basil and parmesan cheese.

A Glowing Garlic Butter Centrepiece

Roasted garlic and woody herbs like rosemary and thyme blend seamlessly into softened butter, creating a rich, aromatic base that smells incredible as it warms. I love how this recipe turns a simple compound butter into a theatrical experience, making it a brilliant conversation starter for any gathering.

The secret to the perfect texture is whipping the butter while soft rather than melting it, ensuring the candle holds its shape until the wick is lit. As the flame burns, the butter slowly liquefies into a savoury pool of gold, perfect for dipping toasted baguette slices or a crusty loaf.

Top Tips for Success
  • Use a cotton wick without wax to keep the flavour pure.
  • Tap the mould firmly between layers to remove air bubbles.
  • Chill the candle overnight to let the garlic and herbs fully meld.
