Lepinje holds a central place in Bosnian culinary tradition, particularly as an accompaniment to the country's famous grilled meat dishes.
The bread developed as a staple in the Balkan region, influenced by Ottoman baking traditions that emphasised soft, leavened flatbreads cooked at high temperatures. Traditionally baked in wood-fired ovens known as "sace" or in home ovens, lepinje distinguishes itself from other regional breads through its characteristic thickness and the distinctive scoring pattern on top, which helps the bread expand and creates its signature appearance.
The use of milk and oil in the dough reflects the agricultural practices of rural Bosnia, where dairy and sunflower oil were readily available ingredients. While modern recipes often use standard ovens, the fundamental technique of double rising and high-temperature baking remains unchanged, preserving the bread's authentic texture and flavour that has sustained Bosnian families for generations. ■
