Instructions

Step 1 instruction thumbnail 1

Sprinkle yeast over lukewarm water, stir briefly, and let sit until frothy (5-10 minutes).

Step 2 instruction thumbnail 2

In a stand mixer or large bowl, whisk together flour, sugar, and salt. Gradually mix in the frothy yeast mixture, milk, and oil until a soft dough forms. Adjust with flour or water as needed.

Step 3 instruction thumbnail 3

Knead the dough on a lightly floured surface until soft and elastic. Place in a bowl, cover, and let rise until doubled (45 minutes to 1 hour). Punch down, cover, and let rise again for another 45 minutes to 1 hour.

Step 4 instruction thumbnail 4

Preheat oven to 480°F (250°C) and grease two baking sheets. Divide dough into six equal pieces, shape into smooth balls, and let rest for 10 minutes. Flatten each ball into a round disc, transfer to baking sheets, cover, and rest for 15 minutes.

Step 5 instruction thumbnail 5

Use the dull side of a knife to press a square or diamond pattern on top of each disc. Bake for 8-12 minutes until golden.

Step 6 instruction thumbnail 6

Remove from oven, sprinkle with water, and wrap in a towel to keep soft. Best enjoyed fresh but can be stored in an airtight container for a couple of days.

Bosnian Lepinje - Soft, Golden Flatbreads Fresh From the Oven

Pressing a decorative diamond pattern into a round of dough before it goes into a blazing hot oven is one of those small but deeply satisfying kitchen rituals - and with Bosnian Lepinje, that simple gesture connects you to a bread-making tradition that has been central to Bosnian hospitality and everyday cooking for generations. These soft, pillowy flatbreads are a staple across Bosnia and Herzegovina, traditionally stuffed with cevapi or simply torn apart and eaten warm with whatever is on the table.

The dough itself is wonderfully forgiving. Flour, sugar, and salt are brought together with a frothy yeast mixture, lukewarm milk, and a splash of sunflower oil until a soft, pliable dough forms. Two rises - each around 45 minutes to an hour - are where the real work happens, developing a gentle chew and a light, open crumb that makes Lepinje so satisfying to eat.

Once shaped into smooth balls and rested, each piece is flattened into a round disc and given its signature scored top using the dull side of a knife. Into a very hot oven they go - 250°C is no accident here. The fierce heat drives a rapid rise and gives the breads their characteristic golden crust while keeping the interior beautifully soft.

The Finishing Touch

Straight from the oven, a quick sprinkle of water and a wrap in a clean towel might seem like an odd step, but it is the secret to that trademark softness. The steam created keeps the crust from hardening as the breads cool, leaving you with something that yields gently at the first tear.

Lepinje are best eaten fresh and warm, though they keep well for a couple of days in an airtight container. Serve them alongside grilled meats, dips, or simply with good butter - they will not last long either way.
