Šelinka - Celery Hot Pot
Selinka, Czech Celery Hot Pot, Celery Root Stew
Where Geography Meets Gastronomy
Šelinka derives its name from the Czech word celer, meaning celery or celeriac, and represents a classic example of Central European peasant cooking.
This dish emerged from the agricultural traditions of the Czech Republic, where root vegetables have been dietary staples for centuries. Celeriac cultivation in Central Europe dates back to the Middle Ages, and this recipe exemplifies the region's skill in transforming humble, locally available produce into substantial, warming meals. The inclusion of white wine suggests influence from neighbouring wine-producing areas, while the addition of beans reflects the need to create complete protein sources in meat-scarce diets.
Historically, such hot pots were cooked slowly in heavy pots over open fires, making them ideal for sustaining families through harsh Central European winters. The optional sheep's milk cheese topping connects to the pastoral heritage of Bohemia and Moravia, where sheep farming remains culturally significant. ■
