Chilaquiles originated in Mexico, with roots tracing back to the Aztec civilization where corn tortillas were a dietary staple.
The name derives from the Nahuatl word "chīlāquilitl," meaning "herbs or greens in chilli broth." Originally created as a way to use stale tortillas, the dish transformed leftover cornmeal flatbreads into a satisfying meal by frying and simmering them in sauce. Regional variations emerged throughout Mexico, with central regions favouring red salsa while Veracruz and other areas developed green salsa versions.
The addition of proteins like chicken evolved as the dish moved from simple home cooking to restaurant fare, though traditional preparations remain focused on the interplay between the corn base and chilli-based sauces.
