The Veneto and Liguria coasts developed cuisine reflecting their distinct maritime histories.

Venice's spice trade monopoly during the Middle Ages infused Venetian cooking with Eastern flavors - saffron, cinnamon, raisins - evident in dishes like sarde in saor. The Republic's connections brought rice from the East, establishing Veneto's risotto tradition. Coastal lagoons provided unique ingredients like soft-shell crabs and go fish. Liguria's rugged coastline limited agriculture, making Genoese traders expert food preservers who created pesto, focaccia, and stockfish dishes.

The region's basil cultivation became legendary, while anchovies and sardines were preserved in salt. Both regions developed sophisticated seafood cuisines with brodetto fish stews and fritto misto.
