Hearty Uzbek Plov: A Central Asian Classic

In Uzbekistan, plov holds ceremonial status, traditionally prepared by men in vast kazans over open flames during weddings and celebrations. This aromatic rice dish layers tender lamb, sweet carrots and whole cumin seeds into a harmonious one-pot feast that has sustained travellers along the Silk Road for centuries. The very name evokes communal gatherings and hospitality.

The technique demands patience and attention. You begin by searing cubed leg of lamb until it develops a deep caramelised crust, then deglaze the pot with water to capture every savoury bit. Onions and cumin seeds fry slowly in butter until golden, creating a fragrant base that permeates every grain during the final steaming.

Building the Layers

Parboiled basmati rice sits atop the meat and julienned carrots, with holes poked through to the bottom allowing steam to circulate evenly. A cloth-wrapped lid traps moisture, gently finishing the dish over low heat until the grains separate perfectly and absorb the rich meat juices.
