Instructions

Step 1 instruction thumbnail 1

Preheat the oven to 400 degrees F. Allow the salmon to come to room temperature (or brine it in Step 2).

Step 2 instruction thumbnail 2

Brine the salmon (optional): While the oven preheats, in a shallow dish mix together 4 cups room temperature water and 3 tablespoons kosher salt. Place the salmon in the water and wait for 15 minutes (this should be about the time it takes to preheat).

Step 3 instruction thumbnail 3

Brush a medium baking dish with olive oil. Place the lemon rounds on the bottom of the baking dish. Place the butter pats on top of the lemons rounds (or drizzle with olive oil). Place the salmon fillets on top of the lemon. Sprinkle the salmon with the kosher salt evenly divided among the fillets.

Step 4 instruction thumbnail 4

In a medium bowl, mix together the garlic powder, onion powder, and dill. Sprinkle the mixture evenly on top of the fillets.

Step 5 instruction thumbnail 5

Bake the salmon for 10 to 16 minutes, depending on thickness, until just tender and pink at the centre (the internal temperature should be between 125 to 130 degrees F in the centre). A 1-inch thick fillet should cook in about 15 minutes total.

Step 6 instruction thumbnail 6

For a crispy top, when the salmon is at 115 degrees F, grill for about 2 minutes (about the last 2 minutes of the cook time).

Preheat your oven to 200°C and allow the salmon fillets to come to room temperature while you prepare the optional brine, a simple step that transforms good fish into restaurant-quality fare. This gentle soaking in salted water firms the flesh and seasons it throughout, ensuring each flake remains moist during the brief, high-heat bake.

Arrange lemon rounds in a lightly oiled baking dish to create a fragrant bed that prevents sticking and infuses the fish with citrus oils. Dot the lemons with thin pats of butter - or a drizzle of olive oil if you prefer - then nestle the salmon on top, seasoning generously with garlic powder, onion powder, and dried dill.

Perfect Timing

Bake for ten to sixteen minutes depending on thickness, watching for that moment when the centre turns from translucent to opaque pink. For those who enjoy a golden crust, switch to the grill for the final two minutes once the internal temperature reaches 46°C, then spoon the melted lemon-butter over the fillets before serving.

This dish pairs beautifully with steamed greens or a simple couscous, though it stands equally well on its own for a light lunch. Leftovers keep refrigerated for three days, though the vibrant flavours are best enjoyed immediately.
