Preheat oven to 175C / 350F. Roast apples in a dish with 6mm / 0.25in of water for one hour until golden and wrinkled.

Cool apples completely, remove skins and cores, and blend the puree until smooth.

Whip the puree, egg whites, and granulated sugar in a mixer for 10 minutes until a thick white foam forms.

Preheat oven to 82C / 180F. Line a baking sheet with parchment paper.

Spread most of the foam into the pan, reserving about 350ml / 1.5 cups in the fridge.

Bake for 4 to 6 hours until dry to the touch and solid.

Cool completely and peel from parchment.

Cut into three equal rectangles. Stack them using the reserved cold puree as glue to fill gaps.

Return the stacked pastila to the oven on parchment paper for 90 minutes to mold the layers.

Cool completely, dust with powdered sugar, and slice into inch-long pieces.
