Other considerations for this recipe

Preserving Miso Flavour
Do not boil the broth after adding the miso paste, as high heat will destroy the beneficial enzymes and delicate flavour. Always add miso at the end of cooking and warm gently.
Adjusting Broth Consistency
If the broth reduces too much during simmering, it may become overly salty. Simply add a splash of water to reach your desired intensity.
Crispy Tofu Method
For best results, press firm tofu to remove moisture, then cube and pan-fry in a neutral oil until golden on all sides, or bake at 200C/400F until crisp.
Topping Suggestions
Use a combination of fresh and cooked vegetables for textural contrast. Popular additions include kimchi for probiotic tang, soft-boiled eggs for non-vegan diners, or smoked mushrooms for depth.

Nutritional Benefits

Shiitake mushrooms provide immune-supporting beta-glucans.

Silken Broth and Crisp Tofu

Deeply caramelising onions until they turn a rich golden brown creates the savoury foundation that sets this vegan broth apart from simpler soups. This patient technique draws out natural sweetness and builds complex flavour before the liquid even touches the pot, ensuring every spoonful carries warmth and depth.

Once the onions surrender their intensity, kombu and dried shiitake join the gentle simmer, releasing their oceanic, earthy essence into the vegetable stock. White miso stirred in at the final moment preserves its delicate probiotic character whilst adding that indispensable fermented richness that defines authentic ramen.

Building Your Bowl

The true artistry lies in the assembly and personalisation. Toss slippery ramen noodles with nutty sesame oil to prevent clumping, then arrange golden cubes of crispy tofu alongside vibrant steamed bok choy or roasted winter squash. Each garnish - whether sharp scallions, toasted furikake, or a daring swirl of sriracha - adds another textural dimension to the experience.

Serve immediately whilst steam rises from the bowl, inviting you to slurp the springy noodles and savour every last drop of the deeply savoury, shiitake-infused broth.
