Add the garlic, chilli and tomato paste. Fry for 1 minute, stirring constantly, until mixed with the oil. Stir in the turmeric, sugar and water.

Add the pumpkin and turn to coat in the sauce. Lay the tomato slices on top, bring to a simmer, then cover, lower the heat and cook for 25-30 minutes until the pumpkin is tender, stirring gently once or twice.

Meanwhile, mash the garlic to a paste with a little salt, then mix with the yoghurt and lemon juice. Season with salt, pepper and additional lemon juice to taste.
