Pulse squash and potatoes in a food processor until coarsely chopped, then transfer to a bowl. Add diced onion, vegan beef or tofu, remaining salt, pepper, sesame oil, water, coriander, cumin, and garlic. Mix thoroughly and set aside.

Heat sesame oil in a sauté pan over high heat. Add sliced onion and salt, sauté for 2 minutes, then reduce heat to low and cook for 12 to 15 minutes until translucent. Remove from heat, stir in gochujang, and set aside.

Prepare a tiered steamer by greasing or lining with parchment. Divide dough into eight equal balls, then roll each into thin sheets using a pasta machine on the second-thinnest setting until translucent.
