Golden Crusts and Ruby Jewels

Tahchin takes its name from the Persian words tah (bottom) and chin (arranged), referring to the prized golden crust that forms at the base of the dish. This baked iteration transforms humble basmati rice into a spectacular centrepiece through the alchemy of yoghurt, egg yolks, and saffron.

The mixture creates a binding custard that permeates the grains, turning the exterior into a deep amber shell whilst keeping the interior fluffy and fragrant. Dried barberries, plumped with butter and scented with rose water, provide jewelled bursts of tartness against the rich, savoury base.

The Art of the Flip

Patience rewards the cook with the final reveal. After baking until the crust crackles and the kitchen fills with the heady aroma of saffron, the dish must rest before the decisive moment.

  • Crisp, caramelised edges from the yoghurt-egg binding
  • Tender, saffron-infused rice within
  • Bright, sour barberries cutting through the richness

Place your serving plate atop the dish and invert with confidence. The oil ensures a clean release, unveiling a dome of glistening rice studded with ruby berries. Slice through the crust to hear that satisfying crunch, then serve immediately whilst the contrasts of texture remain at their peak.

The History & Culinary Soul of the Region

Persian Saffron Rice (Tachin) history

Tachin holds a venerable position within Iranian gastronomy, representing centuries of Persian rice cookery refined into a single, dramatic presentation. The dish takes its name from the Persian word 'tah' meaning bottom and 'chin' meaning to place, directly referencing the technique of creating a deliberate crust at the base of the cooking vessel. This crispy layer, known as tahdig, transforms from humble rice into a coveted delicacy through the addition of yogurt, egg yolks, and saffron-infused oil.

The preparation reflects Iran's historical position along the Silk Road, where saffron from Khorasan and barberries (zereshk) from the mountains found their way into royal kitchens and family tables alike. Saffron cultivation in Iran dates back over three millennia, with the red gold threads providing both colour and subtle floral notes that define the national palate. Barberries, native to the region, contribute their characteristic sharpness that cuts through the richness of the egg and yogurt binding.
