Layers of Comfort: The Lazy Pierogi Casserole

Layering wide lasagne sheets with rich mashed potatoes creates a sumptuous bake that captures the essence of traditional pierogi without the tedious crimping of individual dumplings. This Central European-inspired casserole brings together the earthy comfort of potatoes and the sharp tang of cheddar, bound together with sour cream and butter for an unapologetically indulgent texture.

A Modern Twist on Tradition

Whilst authentic Polish pierogi demand patience and nimble fingers, this lazy adaptation offers the same soul-warming satisfaction in a fraction of the time. The melted butter and caramelised onions infuse every bite with depth, whilst fresh chives provide a bright counterpoint to the creamy richness.

Serve steaming portions with an extra dollop of sour cream and a scattering of chives. A crisp cucumber salad or pickled beetroot on the side cuts through the richness beautifully, completing a meal that feels like a warm embrace on a chilly evening.
