Mix the sauce ingredients together in a small bowl until the sugar dissolves.

Trim the stem ends from the green beans, then chop into 2 - 2.5cm / 4/5 - 1 inch pieces.

Heat 1 1/2 tablespoons of oil in a heavy-based skillet over high heat until smoking. Add the beans and spread out to cover the base. Leave for 1 minute without stirring.

Stir quickly, spread out again, and cook for 30 seconds. Stir once more, then leave for 30 seconds. Repeat this process once more for a total cooking time of 2 1/2 minutes, until the beans are charred but tender-crisp. Remove to a bowl.

Reduce heat to medium-high. Add the remaining 1 tablespoon of oil, followed by the onion, garlic, and ginger. Cook for 1 minute until the edges of the onion turn golden.

Increase heat back to high. Add the pork mince and cook, breaking it up with a spoon, for 2 minutes until cooked through.
