Instructions

Step 1 instruction thumbnail 1

Slice beef against the grain into bite-sized pieces. Toss with 2 tbsp cornflour, 2 tbsp dark soy sauce, 1/2 tbsp chicken bouillon and 1/2 tbsp black pepper. Cover and marinate while preparing the sauce.

Step 2 instruction thumbnail 2

Whisk remaining dark soy sauce with rice wine vinegar, brown sugar, remaining cornflour, remaining chicken bouillon and sesame oil until smooth.

Step 3 instruction thumbnail 3

Cook noodles in boiling water for 5-7 minutes until tender, then drain. If using fresh noodles, rub on a chopping board to separate strands.

Step 4 instruction thumbnail 4

Heat sesame oil in a wok over high heat. Stir-fry marinated beef for 5-7 minutes until browned and cooked through. Add onion, garlic, ginger and spring onions. Cook for 2 minutes until fragrant.

Step 5 instruction thumbnail 5

Add drained noodles to the wok. Pour over the prepared sauce and toss on medium-high heat until evenly coated. Add pak choi and cook on low heat for 5 minutes until just tender.

Step 6 instruction thumbnail 6

Serve topped with additional spring onions, sesame seeds and chilli oil if desired.

Slicing beef against the grain transforms tough cuts into tender morsels that melt in your mouth. This technique sits at the heart of every great Chinese stir-fry, where quick, fierce heat locks in juices whilst creating that coveted caramelised edge.

Our Quick Chinese Beef Noodles balance savoury depth with crisp vegetable texture. The marinade works double duty, tenderising the meat whilst building a foundation of garlic, ginger, and dark soy. When the wok sears at high heat, these aromatics bloom into something truly aromatic, coating each strand of egg noodle in glossy, umami-rich sauce that clings rather than pools.

Customising Your Bowl

The beauty of this dish lies in its adaptability. Pak choi adds gentle bitterness and crunch, though broccoli or mushrooms substitute beautifully when the fridge demands creativity. A drizzle of chilli oil at the finish introduces welcome heat that cuts through the sesame richness, whilst toasted sesame seeds offer nutty contrast.

  • Slice beef when partially frozen for cleaner, uniform pieces
  • Prep all ingredients before heating the wok - stir-fries wait for no one
  • Fresh noodles need only brief separation on a board after draining

Whether served as a speedy weeknight supper or a casual lunch for friends, these noodles deliver restaurant-quality satisfaction without the delivery fee.
