STEP 1

Slice beef against the grain into bite-sized pieces. Toss with 2 tbsp cornflour, 2 tbsp dark soy sauce, 1/2 tbsp chicken bouillon and 1/2 tbsp black pepper. Cover and marinate while preparing the sauce.

Slice beef against the grain into bite-sized pieces. Toss with 2 tbsp cornflour, 2 tbsp dark soy sauce, 1/2 tbsp chicken bouillon and 1/2 tbsp black pepper. Cover and marinate while preparing the sauce.

Whisk remaining dark soy sauce with rice wine vinegar, brown sugar, remaining cornflour, remaining chicken bouillon and sesame oil until smooth.

Cook noodles in boiling water for 5-7 minutes until tender, then drain. If using fresh noodles, rub on a chopping board to separate strands.

Heat sesame oil in a wok over high heat. Stir-fry marinated beef for 5-7 minutes until browned and cooked through. Add onion, garlic, ginger and spring onions. Cook for 2 minutes until fragrant.

Add drained noodles to the wok. Pour over the prepared sauce and toss on medium-high heat until evenly coated. Add pak choi and cook on low heat for 5 minutes until just tender.
