Instructions

For the Soaker

Combine the cereal, sunflower seeds, pumpkin seeds, flax seeds, and cold water in a medium bowl. Cover and leave at room temperature overnight (8-12 hours).

For the Dough

Mix both flours, yeast, and cold water until cohesive. Knead briefly until the mixture becomes thick and clay-like. Cover and rest overnight (8-12 hours).

Assembly and Baking

Grease a 13 x 4 inch pullman pan and lid with butter and dust with rye flour.

Combine the soaker, dough mixture, salt, and molasses in a stand mixer. Mix on low speed for 2-3 minutes, then increase to medium for 2-3 minutes, until thoroughly combined and sticky.

Transfer to the prepared pan, smooth the top, and sift a thin layer of rye flour over the surface. Place the lid on top.

Leave to rise at room temperature for 1½-3 hours until the dough sits ½ inch below the pan rim.

Preheat the oven to 450°F. Bake covered for 20 minutes, then reduce heat to 400°F and bake covered for a further 15 minutes.

Remove the lid, reduce heat to 325°F, and bake uncovered for 45 minutes.

Turn the loaf out onto a cooling rack set over a baking sheet and return to the oven for 10 minutes to crisp the crust.

Cool completely for at least 3 hours before slicing. For best flavour, wrap in foil and wait until the following day.

The bread will keep at room temperature for 3-5 days loosely wrapped in foil. Freeze for longer storage.
Serving Tip
Rye bread is even better a day after baking. If possible, let the completely cooled bread sit at room temperature loosely wrapped in foil overnight before slicing.
