1 batch / 1 batch
30 g / 1 oz or cheese (crumbled)
15 g / 1/2 oz (chopped)
15 g / 1/2 oz (thinly sliced, optional)
150 g / 5 oz (sliced, optional)
3 g / 1/2 tsp
1 g / 1/4 tsp

Heat half of the vegetable oil in a large non-stick pan over medium-high heat

When the oil is hot, fry each tortilla for 30-60 seconds per side until lightly browned. Transfer to a plate lined with kitchen paper to drain, or place on a wire rack set over a baking sheet in a warm oven to keep warm

Add the remaining oil to the pan and fry the eggs to your liking, seasoning with salt and pepper. Cook sunny-side up so the yolk remains runny

To serve, place 2 fried tortillas on each plate and top with black beans, either whole or partially mashed

Drizzle ranchero sauce over the beans and sprinkle with queso fresco and fresh coriander

The Mexican ranch kitchen tradition of frying corn tortillas in shimmering oil until they blister and crisp dates back to the practical need for sturdy edible plates. That sizzle and puff of steam when the tortilla hits the pan remains the essential first note of huevos rancheros, a dish born from farm labourers' need for sustaining morning fuel.

I build each plate with intention. Two golden tortillas form the foundation, layered with earthy black beans that I often partially mash for better cling. The ranchero sauce - bright with tomato and gentle chilli warmth - gets drizzled rather than drowned, allowing the fried egg to remain the visual centrepiece. Sunny-side up is non-negotiable; the ruptured yolk creates its own sauce that mingles with everything beneath.

The Finishing Touch

Queso fresco crumbles lend salty contrast without overwhelming, while cilantro brings clean herbaceous lift.
