Other considerations for this recipe

Coconut selection
Use young green coconuts with soft, jelly-like flesh rather than mature brown coconuts with hard meat. The green coconuts provide both sweet water and tender scraping flesh.
Sweetness
Adjust the quantity of sugar according to the natural sweetness of your pineapple and personal preference. Start with less and add more if needed.
Serving suggestion
For best results, chill the coconut water and pineapple before preparation, or refrigerate the finished talautu for 30 minutes before serving.

Pacific Freshness in Every Spoonful

Talautu has long been a cherished refreshment across the islands of Samoa and Tonga, where green coconuts and ripe pineapples grow in abundance beneath the Pacific sun. This simple preparation captures the essence of island hospitality without requiring any heat or complex technique.

The method relies on texture. You crack open young coconuts, collecting their sweet water as a base, then scrape the soft, jelly-like flesh directly into the liquid. This creates a naturally creamy foundation that carries no dairy yet tastes rich and satisfying.

Balancing the Flavours

Fresh pineapple brings sharp sweetness and acidity to the bowl. When you scrape the fruit rather than chopping it, the fibres meld seamlessly with the coconut pieces. A squeeze of lemon and a touch of sugar complete the harmony, brightening the tropical notes without overwhelming them.

  • Serve immediately in the cleaned coconut shells for authentic presentation
  • Chill for twenty minutes if you prefer a colder dessert
  • Adjust sugar according to the natural sweetness of your pineapple

Every spoonful offers a taste of the Pacific - light, refreshing, and deeply connected to the land.
