STEP 1

Preheat the oven to 180°C/Gas Mark 6. Score the skin of both duck breasts with a sharp knife. Place the breasts skin-side down into a non-stick pan without oil over medium heat for 6 minutes or until the skin is brown, pouring off the fat regularly. Seal the other side for 30 seconds, then brush all sides with five-spice powder and place skin-side up on a rack in a roasting tin. Cook for 15 minutes for medium or 18 minutes for well done.

In the same pan, add enough oil to cover the base and bring to high heat. Add the shallots, chilli-ginger-soy paste and cabbage, stir-frying until the cabbage has wilted to half its original size. Add the miso paste and a few tablespoons of water to loosen the sauce, stir through, then add the egg noodles and coat thoroughly in the sauce.

Remove the duck from the oven and allow to rest while plating the noodles. Slice each breast and arrange on top of the noodles. Serve immediately.
