30 ml / 2 tbsp

10 ml / 2 tsp

Pork Broth
600 ml / 2 1/2 cups
30 g / 2 whole (optional)
25 g / 1 inch cube
9 g / 3 (optional)
45 ml / 3 tbsp
30 g / 4 tbsp

For the Furikake Seasoned Soft Boiled Egg
200 g / 7 oz (4 large)
30 g / 1 , lightly whisked (optional)
24 g / 3 tbsp (optional)
15 g / 1 tbsp seasoning (optional)
To Serve
340 g / 12 oz (4 packets), cooked
60 g / 6 tbsp
15 g / 1 tbsp (for sprinkling)
30 g / 2 tbsp , chopped (for garnish)

Instructions

For the Pork

Finely chop the pork. Mix the chopped or minced pork with the cayenne, shoyu, grated ginger, minced garlic, diced onion, sesame oil and sugar. Cover and refrigerate for at least 2 hours.

Soft Boiled Eggs

Bring a pot of water to the boil over high heat. Reduce to a simmer and gently lower the eggs into the water. Increase heat to medium, cover, and cook for 5 1/2 minutes. Prepare an ice bath.

When the timer sounds, drain the eggs and transfer to the ice bath until cool. Peel gently under cool running water. Set aside.

For the Gravy/Sauce

Optional: Combine pork stock with spring onions, ginger and garlic. Simmer uncovered for 30-40 minutes. Drain and reserve 2 cups of stock.

Heat oil in a saucepan. Add flour and whisk to a smooth slurry. Cook until light brown.

Add 2 cups of stock, shoyu, mirin and chilli flakes. Whisk continuously until thickened. Set aside.

Spicy Pork

Heat a little oil in a nonstick pan. Add marinated pork and stir fry for 5-10 minutes until browned and starting to crisp. Drain excess oil and set aside. Wipe the pan.

Optional Egg Coating

Heat a small amount of oil in the pan. Combine cornflour and furikake. Coat the soft-boiled eggs in egg white, then roll in the cornflour mix. Fry briefly on each side until just browned. Set aside.

To Serve

Divide cooked ramen noodles among four bowls. Pour gravy equally over the noodles.

Top with pork, furikake egg, a sprinkling of furikake, fried shallots and chopped spring onions. Serve immediately.

Other considerations for this recipe

Pork cut options
While country style ribs work well, boneless pork chops are equally suitable. Mince can also be used for a different texture.
Adjusting heat
The cayenne pepper and chilli flakes can be adjusted to taste. For a milder version, reduce or omit the chilli flakes entirely.
Stock quality
Simmering store-bought stock with aromatics improves depth, though this step may be skipped if using high-quality homemade stock.
