Instructions

Main
Step 1 instruction thumbnail 1

Preheat the oven to 180 degrees C (350 degrees F). Grease a 23x33cm (9x13-inch) baking dish with cooking spray.

Step 2 instruction thumbnail 2

Bring a large pot of lightly salted water to a rolling boil over high heat. Stir in ziti and return to a boil. Cook pasta uncovered, stirring occasionally, until cooked through but still firm to the bite, about 8 minutes. Drain well.

Step 3 instruction thumbnail 3

While pasta is cooking, heat a large skillet over medium heat. Add sausage; cook and stir until brown, about 10 minutes. Drain sausage and set aside.

Step 4 instruction thumbnail 4

Stir together ricotta, onion, egg, garlic, and oregano in a large bowl until well combined. Stir in pasta, sausage, salt, pepper, and half of the spaghetti sauce; mix well.

Step 5 instruction thumbnail 5

Cover the bottom of the prepared baking dish with one-third of the remaining spaghetti sauce. Layer with half of the pasta mixture, half of the remaining spaghetti sauce, and half of the shredded cheese. Repeat layers once more using remaining pasta, sauce, and cheese. Sprinkle basil over top and cover the dish tightly with aluminium foil.

Step 6 instruction thumbnail 6

Bake in the preheated oven until heated through, about 20 minutes. Uncover; return to the oven and bake until cheese is melted, 5 to 10 more minutes.

Layered Comfort: Baked Ziti with Sausage

The hollow tubes of ziti pasta act as perfect vessels, capturing generous pockets of seasoned sausage and creamy ricotta in every single bite. Unlike flat lasagne sheets or thin spaghetti, these sturdy cylinders maintain their structure through boiling and baking, creating distinct chambers of flavour that burst when you cut through the golden cheese crust. This architectural integrity makes baked ziti particularly satisfying, offering a forkful of varied textures in each mouthful.

Preparation begins with the careful browning of Italian sausage, rendering its fat to create a savoury foundation. While the meat cooks, the ricotta mixture comes together with minced onion, egg, and oregano - the egg acting as a binding agent that prevents the cheese from becoming too loose during baking. The raw onion softens just enough in the oven to lend sweetness without losing its textural presence, while garlic infuses the dairy with pungent depth.

Assembly and Transformation

Building the casserole requires a methodical approach: a base layer of tomato sauce prevents sticking and provides moisture from below. Half the pasta mixture creates the first stratum, followed by more sauce and a blanket of shredded Italian cheese blend. Repeating these layers ensures that no bite lacks saucy richness or melted dairy. The aluminium foil tent during the initial bake traps steam to cook the egg through and meld the flavours, while the final uncovered minutes create those coveted crispy, blistered cheese edges.

The result emerges from the oven as a bubbling, aromatic centrepiece that demands to be spooned rather than sliced. Each portion reveals cross-sections of the tubular pasta filled with herbed cheese and crumbled sausage, stained red with tomato sauce.

  • Serve with a sharp rocket salad dressed in lemon to cut through the richness
  • Prepare components a day ahead and assemble just before baking for easier entertaining
  • Substitute hot Italian sausage for a spicier kick that contrasts with the mild ricotta

Whether served at a weeknight family supper or a festive gathering, this dish embodies the convivial spirit of Italian-American cooking. It feeds many without demanding constant attention, allowing the host to enjoy the company rather than tending pans. As the cheese stretches between spoon and plate, it creates those small, shared moments of appreciation that define comfort food at its finest.
