Instructions

Step 1 instruction thumbnail 1

Cut the papaya crosswise into three equal pieces and scrape out the seeds using a spoon.

Step 2 instruction thumbnail 2

Scoop out the flesh from the top and bottom pieces to create bowls, leaving 1 cm (0.5 inch) of flesh against the skin.

Step 3 instruction thumbnail 3

Trim the rounded ends of the bowls so they sit upright, drizzle with 15 ml (1 tbsp) of lime juice, cover with plastic wrap, and refrigerate.

Step 4 instruction thumbnail 4

Peel the centre section of the papaya and cut 2 tbsp of the flesh into small dice, then refrigerate.

Step 5 instruction thumbnail 5

Coarsely chop the remaining centre flesh, place on a parchment-lined baking sheet, and freeze for 2 hours.

Step 6 instruction thumbnail 6

Purée 500 ml (2 cups) of the frozen papaya with the remaining lime juice and sugar in a food processor until smooth and silky, scraping the sides as needed.

Step 7 instruction thumbnail 7

Fill the refrigerated papaya bowls with the sorbet.

Step 8 instruction thumbnail 8

Garnish with the diced fresh papaya, dried papaya, poppy seeds, chia seeds, and lemon balm leaves.

Freezing the papaya flesh before blending is the secret to achieving that professional, silky consistency without needing an expensive ice cream maker. I love how the natural sweetness of the fruit pairs with a sharp hit of lime, creating a balanced flavour that is incredibly refreshing on a hot day.

A Natural Presentation

Serving the sorbet inside the hollowed-out fruit not only looks fantastic but keeps the dessert chilled for longer. To add a bit of crunch, I recommend not skipping the poppy and chia seeds; they provide a lovely textural contrast to the smooth purée. It is a simple yet impressive way to bring a taste of the Americas into your own kitchen.

Already got lots of papaya babies on my tree. Not long before I'll be making this! Can't wait...

Roots, Region & Table

Yumpedia: The Americas Papaya Sorbet Bowl history

The papaya, known as the fruit of the angels, is native to Mesoamerica and has been cultivated for thousands of years across the tropical regions of the Americas. Its journey from a wild forest fruit to a global staple reflects the deep agricultural heritage of the region, where it was prized not only for its sweetness but also for its medicinal properties.

In traditional Latin American cuisines, papaya is often enjoyed fresh or preserved. The evolution of the fruit into frozen desserts like sorbet mirrors the global influence of European confectionery techniques meeting indigenous tropical ingredients. This fusion created a variety of chilled treats that highlight the fruit's creamy texture without the need for heavy dairy.
