In a bowl, stir together the soy sauce, water, oyster sauce, brown sugar, fish sauce, ginger and garlic; set aside.

Cook the noodles according to package directions; drain.

Toss the noodles with 1 tablespoon of the oil; set aside.

In a large wok or skillet, heat the remaining oil over high heat.

Add the beef in a single layer; cook until caramelised, about 30 seconds.
