Place lukewarm water in a bowl and sprinkle over the yeast. Add the sugar, egg and coconut milk, then stir well to combine.

Add the flour, cinnamon, cardamom and salt. Stir until a dough forms.

Turn the dough onto a floured board and knead, sprinkling extra flour as needed to prevent sticking, until the dough comes together and feels slightly tacky but not wet.

Roll the dough into a rectangle approximately 1/4 inch thick. Cut into squares, then cut each square diagonally to form triangles.

Leave the cut dough to rest uncovered for 20 minutes.

Heat 3-4 inches of oil in a deep pan to 170-180°C. Fry the mandazi in batches for about 2 minutes per side until golden brown.
