The essentials, at a glance

East Asia Appetizer Dairy-FreeGluten-FreeNut-Free

Quick Pickled Mushrooms are a tangy, aromatic appetiser featuring roasted mushroom quarters marinated in lemon, garlic and olive oil. The brief roasting tenderises the fungi before they absorb the bright, acidic dressing, creating a versatile dish suitable for antipasti platters or salad toppings. This modern quick-pickle method preserves the earthy essence of the mushrooms while adding zesty complexity without lengthy fermentation.

Other considerations for this recipe

Washing mushrooms
While some prefer wiping mushrooms with a damp cloth to prevent water absorption, washing them under running water is acceptable for this recipe since they will be roasted immediately afterwards. The roasting process evaporates excess moisture.
Warm mushrooms absorb flavour
Ensure the mushrooms are still warm when added to the marinade. The heat opens the cellular structure, allowing the fungi to absorb the acidic dressing and seasonings more effectively.

Nutritional Benefits

Tangy Mushrooms in Minutes

Whisking together sharp vinegar and bright citrus creates an instant marinade that transforms earthy roasted mushrooms into something vibrant and punchy. This quick-pickling technique relies on warmth rather than time, allowing the mushrooms to drink up flavour in mere minutes rather than days.

The secret lies in adding the mushrooms while they are still warm from the oven. Heat opens their cellular structure, letting the garlic, lemon zest, and red pepper flakes penetrate deeply. A brief rest at room temperature completes the transformation, creating a pickle that is both tender and tangy.

Serving Suggestions

These mushrooms pair beautifully with grilled proteins or as part of a shared table spread. They keep beautifully in the refrigerator for up to one week, developing even more complexity as they sit. Perfect for impromptu gatherings or weekday meal prep.
