Marinate: Combine pork cubes, red wine, and crushed coriander seeds in a bowl. Cover and refrigerate for 2 hrs or overnight.

Drain meat: Remove pork from marinade (reserve liquid). Pat meat dry with paper towels.

Brown pork: Heat olive oil in a heavy Dutch oven or pot over medium-high heat. Brown pork in batches until golden on all sides. Remove and set aside.

Sauté aromatics: In same pot, add onions. Cook 5 mins until softened. Add garlic, cook 1 minute.

Deglaze: Pour in reserved marinade, scraping up browned bits. Add bay leaves and cinnamon stick. Bring to boil.

Braise: Return pork to pot. Reduce heat to low, cover, and simmer for 1 hr until pork is very tender and sauce has reduced and thickened.

Finish: Stir in red wine vinegar. Season with salt and pepper. Remove bay leaves and cinnamon.
