Instructions

Main
Step 1 instruction thumbnail 1

Place the chicken breasts in a saucepan with the water, half the salt, and half the pepper. Bring to a boil and simmer for 20 minutes until cooked through.

Step 2 instruction thumbnail 2

Remove the chicken from the water and allow to cool. Once cooled, shred into thin 1-inch pieces using two forks.

Step 3 instruction thumbnail 3

While the chicken cooks, cut the corn tortillas into strips or triangles.

Step 4 instruction thumbnail 4

Heat the vegetable oil in a frying pan over medium heat. Fry the tortilla pieces in batches until golden and crisp, approximately 2-3 minutes per batch.

Step 5 instruction thumbnail 5

Transfer the fried tortillas to a plate lined with absorbent paper to drain excess oil.

Step 6 instruction thumbnail 6

Heat the red salsa in a large saucepan. Dilute with a little water if too thick, maintaining the seasoning. Adjust salt and pepper to taste.

Step 7 instruction thumbnail 7

Peel the white onion and slice into thin wheels, then separate into rings. Set aside.

Step 8 instruction thumbnail 8

Add the shredded chicken and fried tortilla pieces to the hot salsa. Stir quickly to coat the tortillas without allowing them to soften completely.

Step 9 instruction thumbnail 9

Serve immediately using a ladle, placing a portion of the saucy tortilla mixture onto each plate.

Step 10 instruction thumbnail 10

Drizzle with heavy cream, then sprinkle with chopped coriander and crumbled cheese.

Step 11 instruction thumbnail 11

Top with thin onion wheels to finish.

Other considerations for this recipe

Using stale tortillas
Traditional chilaquiles were developed to use leftover, slightly stale tortillas which absorb the sauce better than fresh ones without becoming mushy too quickly.
Salsa texture
The sauce should coat the back of a spoon but remain pourable. If too thick, dilute sparingly with water or chicken stock to maintain flavour intensity.
Serve immediately
Chilaquiles wait for no one. The contrast between sauce-soaked and crisp tortilla pieces is fleeting, so plate and garnish promptly.

Crisp Tortillas with Shredded Chicken in Red Sauce

The magic of chilaquiles rests entirely on timing. You must introduce those golden fried tortilla pieces to the simmering red sauce at the precise moment before serving, allowing them to absorb the smoky warmth whilst retaining their essential crunch. Leave them too long and you surrender to sogginess; remove them too quickly and the sauce merely coats rather than marries.

This dish transforms humble leftovers into something genuinely celebratory. Day-old corn tortillas, cut into strips and fried until they shatter between the teeth, form the sturdy foundation. Shredded chicken adds protein-rich substance, whilst the sauce - typically a blend of tomatoes, chillies, and aromatics - provides the vibrant, tangy backbone that defines the plate.

Making It Your Own

The garnishes elevate each portion from simple to sublime. A drizzle of cream cuts through the acidity, crumbled cotija or feta brings salty funk, and fresh coriander offers that essential herbal lift. Thin wheels of white onion add sharp crunch and a faint sulphurous sweetness that balances the richness.

Serve immediately, whilst the contrast between crisp and yielding remains distinct. Whether enjoyed as a hearty breakfast or a comforting supper, these chilaquiles deliver the satisfying collision of textures that has sustained Mexican home cooking for generations.
