Place the chicken gizzards in a pot and add the salt, bouillon, curry powder, and sliced onion. Mix thoroughly until the gizzards are evenly coated.

Pour in water to cover the gizzards and bring to the boil. Simmer for approximately 20 minutes until tender, checking occasionally to prevent the liquid from evaporating completely.

While the gizzards cook, combine two red bell peppers, one onion, and the tomatoes in a food processor. Blend to a coarse consistency and set aside.

Once the gizzards are tender, remove them from the stock and set aside. Reserve the stock for another use if desired.

Heat oil in a deep pan over medium heat. Fry the plantain chunks in batches until golden brown on all sides. Remove with a slotted spoon and drain on absorbent paper.

Fry the boiled gizzards in the same oil for 30 seconds to 1 minute until lightly crisped. Remove and drain on absorbent paper.

Reduce the oil in the pot to approximately 120 ml or transfer 120 ml of fresh oil to a separate pot over medium heat.

Add the blended pepper and tomato mixture. Cook until the liquid reduces and the oil begins to float on the surface.

Stir in the curry powder, salt, bouillon, thyme, and black pepper. Mix well to combine.

Add the fried plantains, gizzards, diced red bell pepper, and fresh herbs. Stir-fry for approximately 2 minutes until everything is well coated with the sauce.
