Instructions

Step 1 instruction thumbnail 1

Peel and finely chop the garlic and pancetta, then place in a non-stick frying pan on a medium heat with the olive oil. Add the breadcrumbs and fry until crunchy and golden, tossing regularly. Leave to cool.

Step 2 instruction thumbnail 2

For the sauce, whisk together the mayonnaise, yoghurt, ketchup, half the lemon juice and a dash each of Worcestershire and Tabasco sauce. Season to perfection, tasting and tweaking.

Step 3 instruction thumbnail 3

Finely shred the lettuces. Halve the cucumber lengthways, scrape out the seeds with a teaspoon, then chop into 1cm dice. Quarter the cherry tomatoes. Snip the cress.

Step 4 instruction thumbnail 4

Halve and destone the avocado, then squeeze the flesh into a blender with the remaining lemon juice. Blitz until smooth, loosening with a splash of water if needed, then season to perfection.

Step 5 instruction thumbnail 5

Line up six clean wide-necked jam jars or glasses. Divide the lettuce between them, followed by the cucumber and tomatoes, gently pressing down as you build the layers.

Step 6 instruction thumbnail 6

Spoon in the cool, crispy pancetta crumbs, top with the cress, then sprinkle in the shrimp and prawns. Drizzle in the sauce and add a pinch of cayenne to each. Spoon over the blitzed avocado, cover and serve.

Other considerations for this recipe

Substitution note
Smoked streaky bacon can replace the pancetta if unavailable, though pancetta provides a more delicate texture.
Make-ahead tip
Prepare the pancetta crumbs, Marie Rose sauce, and blitzed avocado up to 4 hours ahead. Store separately in airtight containers in the refrigerator and assemble just before serving to maintain the crisp texture of the lettuce.
Variation
For a classic twist, add a splash of brandy to the Marie Rose sauce when whisking.

Retro Revival with a Modern Twist

Picture a summer lunch table where each guest receives their own wide-necked jar, revealing distinct strata of emerald lettuce, ruby tomatoes, and coral-pink seafood. This is prawn cocktail elevated from its 1970s dinner-party reputation into something altogether more refined.

Building the Layers

The secret lies in the construction. We begin with crisp little gem and diced cucumber, followed by sweet cherry tomatoes and a scattering of peppery cress. The seafood medley of brown shrimp and peeled prawns provides the star attraction, nestled atop crispy pancetta breadcrumbs that offer a salty, smoky crunch against the tender shellfish.

The sauce strikes that perfect balance between richness and tang - mayonnaise and yoghurt lightened with lemon, Worcestershire, and a careful dash of Tabasco. A final crown of silky avocado blended with citrus completes the picture.

Prepared entirely in advance and refrigerated until needed, these individual portions allow you to enjoy your company rather than fussing in the kitchen. Simply hand them out and watch guests dig their spoons through the layers.
