Preheat oven to 220°C / 425°F and line two large baking sheets with parchment paper.

To make the marinade, combine canola oil, honey, light soy sauce, crushed garlic, grated ginger and salt in a large bowl.

Tear larger oyster mushrooms in half, keeping smaller ones intact. Add to the marinade and mix thoroughly to coat.

Thread mushrooms onto eight skewers and arrange on prepared baking sheets.

Meanwhile, prepare the salad: slice bok choy stems into 1 cm pieces and leaves into 2.5 cm pieces. Combine in a serving bowl with sliced celery and cucumber.
