Bake Tater Tots

Spice Mixture

Meanwhile, melt ghee in a small saucepan over medium-low heat. Add amchur, asafoetida, turmeric, Kashmiri chilli powder, and salt. Cook, stirring often, until fragrant and sizzling, about 3 minutes. Remove from heat.

Tamarind Chutney

Combine tamarind concentrate, jaggery, asafoetida, ground ginger, Kashmiri chilli powder, cumin, salt, and water in a small saucepan. Simmer, stirring often, until reduced by one third, 2-3 minutes. Remove from heat.

Green Chutney

Blend fresh ginger, jalapeño, coriander, mint, yoghurt, yellow onion, salt, and water until sauce-like but still chunky, 1-2 minutes. Set aside.

Yogurt Sauce

Mix yoghurt, lime juice, sugar, and salt in a small bowl. Set aside.

Assembly

Transfer tater tots to a large bowl and toss with the reserved ghee mixture until thoroughly coated.

Spread yoghurt sauce over a serving platter. Scatter coated tater tots evenly over the sauce. Spoon tamarind and green chutneys over the top. Garnish with pomegranate seeds, torn mint, coriander with tender stems, sev, and chopped red onion.

Tamarind and green chutneys can be made 3 days ahead. Cover and chill separately.
Substitutions
Unsalted butter can replace ghee. Dark brown sugar can replace jaggery. Adjust Kashmiri chilli powder to taste for heat preference.
