Season chicken: Pat chicken dry. Season generously with salt and pepper on all sides.

Sear chicken: Heat olive oil in a large heavy pot or Dutch oven over medium-high heat. Brown chicken pieces in batches, 4-5 mins per side. Remove and set aside.

Sauté vegetables: In same pot, add onion and cook 5 mins until softened. Add garlic, mushrooms, and bell pepper. Cook 5-7 mins until mushrooms release moisture and begin to brown.

Build sauce: Stir in tomato paste, cook 2 mins. Add wine, scraping up browned bits from bottom. Simmer 3 mins to reduce slightly.

Simmer: Add canned tomatoes, chicken stock, oregano, rosemary, bay leaves, and chili flakes. Return chicken to pot, skin side up. Bring to boil, then reduce heat.

Cook: Cover and simmer on low for 35-40 mins until chicken is tender and cooked through (internal temperature 74°C/165°F).

Serve: Remove bay leaves. Adjust seasoning. Garnish with fresh basil. Serve with crusty bread or polenta.
