Heat the vegetable oil in a large wok or non-stick pan over medium-high heat. When hot, add the julienned ginger and saute until golden at the edges.

100 g / 3.5 oz (washed and sliced, white and light green parts only)
100 g / 3.5 oz (shredded)
2 g / 1 tsp (adjust to preference)
2 g / 1 tsp (adjust to preference)

Heat the vegetable oil in a large wok or non-stick pan over medium-high heat. When hot, add the julienned ginger and saute until golden at the edges.

Increase heat to high. Add the leeks, carrots, half the soy sauce, cayenne pepper, black pepper, and brown sugar. Saute for several minutes until the leeks soften, ensuring the mixture remains fairly dry and not watery.

Add the halved shrimp, shredded chicken, and half the chopped spring onions. Stir fry until the shrimp turn pink, approximately two to three minutes.

Whisk the eggs thoroughly in a bowl and set aside.

Push the vegetable and meat mixture to one side of the pan. Add a little oil to the empty side. When hot, pour in the whisked eggs and scramble until dry. Mix the scrambled eggs through the vegetable mixture, then lower the heat to medium.

Add the cooked rice, chicken stock, and sliced Thai basil leaves. Mix thoroughly to combine.

Taste and add the remaining soy sauce according to preference.

Continue to saute until the stock is absorbed and all ingredients are well mixed. Taste and add salt if necessary. Finally, stir in the remaining sliced spring onions.
