Peel the ginger using a spoon or vegetable peeler, then julienne into thin strips

Smash the garlic cloves and discard the skins

Peel and thinly slice the shallots

Heat the cooking oil in a heavy-bottomed pot over medium-low heat. Add the ginger, garlic, and shallots. Cook, stirring often, until fragrant, limp and very lightly browned

Turn the heat up to medium-high. Add the chicken pieces and cook, stirring often, until lightly browned

Season with about a tablespoon of fish sauce and continue cooking, uncovered, until there is very little liquid remaining in the pot

Pour in the chicken broth and bring to the boil. Lower the heat, cover the pot and simmer the chicken for 40 to 45 minutes

Split the green papaya vertically and scoop out the seeds with a spoon. Cut off the skin with a small sharp knife, then cut the flesh into wedges

Separate the chile leaves from any stalks and discard the stalks

After the chicken has simmered for 30 minutes, taste the broth and add more fish sauce if needed. Add the green papaya wedges

Turn up the heat until the broth boils vigorously, then turn down to low, cover and simmer for 15 minutes or until the papaya is tender. Taste and adjust seasonings if necessary

Turn off the heat. Sprinkle the chile leaves over the chicken and papaya. Cover and leave for 5 to 10 minutes to cook in the residual heat. Do not boil once the chile leaves are added as they turn bitter when overcooked
