700 g / 1 lb 9 oz , peeled and thinly sliced
2 medium / 2 medium , peeled and thinly sliced
30 ml / 2 tbsp
28 g / 2 tbsp
5 g / 1 tbsp leaves
1 tsp / 1 tsp
2 tsp / 2 tsp
1 tsp / 1 tsp
125 g / 4.5 oz mature cheese, grated

Preheat the oven to 200 C / 400 F / 180 FAN / Gas 6.

Peel the potatoes and onions and slice thinly. Grate the cheese.

Heat the oil in an ovenproof frying pan over a medium heat. Cook the onions for 5 to 10 minutes until softened, then set aside.

Melt 1 tbsp butter in the same pan over a medium heat, then turn off the heat.

Layer one third of the potatoes, one third of the onions and one third of the cheese in the pan.

Season with salt, pepper and nutmeg, and scatter over some thyme leaves.

Repeat the layering process twice more until all ingredients are used.

Dot the top with the remaining butter.

Heat the pan over a medium heat for 5 minutes to start the cooking process.

Cover with foil or a lid and bake for 40-50 minutes until tender.

Layering butter-kissed potato slices with slow-cooked onions and sharp cheddar builds a dish far greater than the sum of its humble parts. This is Pan Haggerty, a steadfast tradition from the Northumberland coalfields where substantial fare was essential after long shifts underground.

The alchemy happens in the construction. Melted butter coats the base of a heavy ovenproof pan before rounds of potato interleave with sweet onion and generous handfuls of mature cheese. A whisper of ground nutmeg and scattered fresh thyme leaves add subtle warmth and aromatic depth to each stratum.

The Oven Works Its Magic

After a brief sizzle on the hob to kick-start the cooking process, the pan retreats beneath a foil cover into a hot oven. Forty minutes of gentle steaming transforms the potatoes into velvet. Removing the lid for the final ten minutes gifts you a blistered, golden crust that cracks satisfyingly under your fork.

Serve straight from the pan alongside:
