Cauliflower has been cultivated in the Mediterranean region since at least the 6th century BCE, though it gained prominence in Greek cuisine during the Ottoman period when vegetable-based dishes became central to rural diets.

The combination of cauliflower with tomatoes reflects the post-Columbian exchange that transformed Mediterranean cooking from the 16th century onward. Feta cheese, protected by EU PDO status since 2002, has been produced in Greece for thousands of years using sheep's milk or a mixture with goat's milk.

Green olives with pimientos represent a Spanish influence that spread throughout the Mediterranean through trade routes. This particular preparation style - steaming vegetables before finishing them in a flavourful sauce - is characteristic of Greek lathera dishes, where vegetables are cooked with abundant olive oil and tomato. Such preparations were economical, utilised local produce, and could be served as main courses during religious fasting periods or as accompaniments to grilled meats. The dish exemplifies the Mediterranean diet principles recognised by UNESCO as Intangible Cultural Heritage.
