Crispy Devilled Whitebait with Roasted Garlic Mayo

The key to elevating simple whitebait lies in patience: slow-roasting garlic cloves until they caramelise and soften creates a mayonnaise that is mellow, sweet, and utterly addictive. When squeezed from their papery skins and folded into good quality mayo with a squeeze of lemon, the resulting dip transforms this humble bar snack into something truly memorable.

For the coating, a blend of cornflour and rice flour ensures a shatteringly crisp finish that refuses to go soggy. English mustard powder brings a fierce heat that wakes up the palate, while sweet smoked paprika adds a subtle, earthy depth reminiscent of Spanish patatas bravas. A generous pinch of cayenne ties the spices together with a warming hum.

Perfect Frying

Working in small batches is essential when deep-frying. Crowding the pan drops the oil temperature, resulting in greasy rather than golden fish. Aim for 180C and watch as the tiny silver fish turn a deep bronze in just four to five minutes. Drain them on kitchen paper briefly, but serve immediately while the coating still crackles.

Sprinkle with extra sea salt flakes and a pinch more cayenne, then present with lemon wedges for squeezing over. The acidity cuts through the richness of the garlic mayo perfectly, creating a balance that keeps you reaching back for another handful.
